This Teochew confinement dish is good for kidney and also a tonic for blood. Pig's kidney must be clean thoroughly to prevent appalling smell.
Ingredients :
- 1 piece pig's kidney
- 200-250g pork sirloin (slice)
- 100g ginger slices
- 3� tbsp sesame oil
- 3 tbsp D.O.M
Marinate : - Soy sauce and starch to taste
Seasoning : - 1 tbsp soy sauce
- 1 tbsp starch solution
Method :
- Halve kidney and de-vein, soak in water for 2 hours, then slice and blanch in hot water briefly, set aside.
- Marinate pork sirloin with soy sauce and starch.
- Heat sesame oil and saut� ginger until golden brown, add in pork sirloin and kidney, stir fry and then season with soy sauce & thicken with starch. Pour Dom on top before dish out.
