This Cantonese-inspired scallop porridge is a nutritious confinement breakfast. Chinese wolfberries (Qi Zi) helps to reduce blood glucose and strengthen the eyesight.
Ingredients :
100g rice
120g chicken breast
3 pieces dried scallop
20g ginger
1 tbsp Chinese wolfberries or goji berries (Qi Zi)
2 bowls boiling water
A handful of chopped spring onion
Seasoning :Pinch of salt
1 tsp sesame oil
Method :
Soak the dried scallop until soften and then juliennes, shred ginger.
Boil chicken breast until cooked and juliennes with hand, keep the water.
Wash rice, add in scallop and water, simmer with low heat until porridge is cooked, then add in shredded chicken, ginger and Chinese wolfberries (goji berries) and bring to boil.
To serve, add in the seasoning and sprinkle spring onion on top.
