Kampong chicken are reared in a more humane way, with more firmer and stronger cuts of meat. Pairing this healthier and nutritious kampong chicken with fermented wine rice and wine is the most popular confinement cooking among Fuzhou community.
Ingredients :
- 500g kampong chicken
- 2 tbsp sesame oil
- 50g old ginger
- 50g fermented wine rice
- 30g Fuzhou red wine
- dash of sugar and soy sauce
Method :
- Cut chicken into pieces, skinned ginger and slice.
- Heat a wok with sesame oil and saut� ginger until fragrant, then add in fermented wine rice & wine, add in chicken and stir-fry briefly, and season with sugar and soy sauce before serving.
