Herbed Rice (Nasi Ulam) Recipe

Made from fresh and raw ingredients, this Nyonya confinement dish is known to dispel postpartum 'wind' and enriched with other curative properties. Cekur leaves (leaves of Kaempferia galanga) often served as ulam and they go well with rice. The rhizome of Kaempferia galanga (a.k.a kencur, aromatic ginger, sand ginger, resurrection lily, lesser galangal, or 'Sha Jiang' in Chinese) is used as post-natal tonic, intestinal remedy and in other traditional cures for flatulence and arthritis.

Ingredients :Traditional Chinese Nyonya Confinement Food Recipe - Herbed Rice (Nasi Ulam)
  • 3 cups cooked rice
  • 1 stalk bird's eye chili
  • 40g turmeric (julienne)
  • 5 cloves garlic (sliced)
  • 5 shallots (sliced)
  • 2 stalks lemongrass (sliced thinly)
  • 10 kaffir lime leaves (sliced thinly)
  • 5 cekur leaves (sliced) (leaves of Kaempferia galangal)
  • 100g salted Kurau fish fillet ('kiam hu') (deep fried, shredded/pounded)
  • � tsp pepper or to taste
Method :
  1. Place all ingredients in a mixing bowl and toss together.
  2. Serve immediately for lunch or dinner.
