Mediterranean Garlic Feta Spread

About This Recipe

"You can double the recipe, add more garlic, use basil rather than oregano, try adding the cayenne pepper in the mixture itself for some added kick. Serve with toasted pita, cucumber slices, black olives, ect."

Ingredients

    • 2 cups crumbled feta cheese
    • 3 garlic cloves, finely minced
    • 2 tablespoons chopped and firmly packed fresh oregano leaves
    • cayenne pepper, for sprinkling on top
    • leaf oregano ( to garnish)

Directions

  1. Mix together the feta, garlic, and chopped oregano, until it becomes a somewhat smooth yet lumpy consistency.
  2. Serve with whatever you like for dipping.

Mediterranean Potato Salad With Shrimp and Feta

Ingredients

    Dressing

    • 3 tablespoons basil ( chopped fresh)
    • 1 tablespoon lemon juice ( fresh squeezed)
    • 2 teaspoons olive oil ( EVOO)
    • 3/4 teaspoon Splenda granular
    • 1/4 teaspoon black pepper
    • 1/4 teaspoon Dijon mustard

    Salad

    • 1 1/2 lbs potatoes ( quartered, red babies work best)
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1 lb shrimp ( medium -cooked and peeled)
    • 3 cups lettuce ( thinly sliced romaine works well)
    • 1 cup red bell peppers ( cut into 1/4-inch strips)
    • 1 cup yellow bell peppers ( cut into 1/4-inch strips)
    • 1 cup red onions ( thinly sliced)
    • 1/2 cup crumbled feta cheese
    • 2 tablespoons kalamata olives ( chopped)

Directions

  1. To prepare dressing, combine first 6 ingredients, whisk to combine.
  2. .
  3. To prepare salad, arrange potatoes in a single layer on a microwave-safe dish; sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper. Microwave at high 15 minutes or until potatoes are tender. Place potatoes in a large bowl.
  4. Add shrimp and 1 tablespoon dressing to potatoes; toss gently to combine. Add remaining dressing, lettuce, bell peppers, onion, and cheese; toss gently to coat. Top each serving with 1 1/2 teaspoons kalamata olives.

Cheddar Cheese, Pretzel, Beer & Beef Hamburgers

Ingredients

    • 1/2 cup beer
    • 1/3 cup finely crushed pretzels
    • 3 tablespoons chopped onions
    • 1 minced garlic cloves
    • 1 chipotle chiles in adobo, minced
    • 2 tablespoons pickle relish
    • 1/2 teaspoon salt
    • 2 lbs ground beef
    • 4 slices cheddar cheese
    • 4 hamburger buns

Directions

  1. Mix beer, pretzels, onion, garlic, chipotle, relish, and salt together and let sit a couple minutes, and mix into the ground beef. You’ll want to mix until the ingredients are evenly distributed, but be careful not to overwork the ground beef.
  2. Makes 4 very large patties 6 medium.
  3. Grill the burgers till done, about 10-15 minutes, turning once.
  4. Just before taking off place cheese on burgers let melt and remove an place on buns.
  5. Serve with beer and pretzels naturally!

Classic Baked Macaroni and Cheese

With time on it's side - this recipe is hands down the best for traditional, homemade baked macaroni & cheese - comfort food. Ingredients

    • 1 (8 ounce) packages macaroni
    • 4 tablespoons butter
    • 4 tablespoons flour
    • 1 cup milk
    • 1 cup cream
    • 1/2 teaspoon salt
    • fresh ground black pepper, to taste
    • 2 cups cheddar cheese, shredded good quality
    • 1/2 cup breadcrumbs, buttered

Directions

  1. Preheat oven to 400°F.
  2. Cook and drain macaroni according to package directions; set aside.
  3. In a large saucepan melt butter.
  4. Add flour mixed with salt and pepper, using a whisk to stir until well blended.
  5. Pour milk and cream in gradually; stirring constantly.
  6. Bring to boiling point and boil 2 minutes (stirring constantly).
  7. Reduce heat and cook (stirring constantly) 10 minutes.
  8. Add shredded cheddar little by little and simmer an additional 5 minutes, or until cheese melts.
  9. Turn off flame.
  10. Add macaroni to the saucepan and toss to coat with the cheese sauce.
  11. Transfer macaroni to a buttered baking dish.
  12. Sprinkle with breadcrumbs.
  13. Bake 20 minutes until the top is golden brown.

Nyonya Ulam-Ulam Recipe

Eating galangal and raw young turmeric can help to get rid postpartum 'wind' in the body, improve blood circulation and contract uterus back to its original size. Ingredients :Traditional Chinese Nyonya Confinement Food Recipe - Ulam-Ulam
  • 100g good quality salted Kurau fish ('Kiam Hu')
    Galangal & dried shrimp paste (lengkuas belachan)
  • 10g dried shrimp paste (belachan)
  • 50g galangal (lengkuas), sliced
  • 80g fresh young turmeric roots
Method :
  1. Scrap the skin off the young turmeric roots, set aside.
  2. Heat oil in a wok, pan fry salted fish till crispy, set aside. The traditional way is to toast over charcoal fire until fragrant and turning golden brown.
  3. Season with soy sauce, then serve hot.

    To prepare 
    galangal dried shrimp paste (lengkuas belachan) :
  4. Flatten the dried shrimp paste (belachan) and toast over a slow charcoal fire until aromatic. Keep turning over to prevent burning the dried shrimp paste (belachan).
  5. With a mortar and pestle, pound the galangal finely and then pound in the toasted dried shrimp paste (belachan) until fine.

    To serve :
  6. Place a steaming hot bowl of rice on a plate and eat with galangal & dried shrimp paste (lengkuas belachan), fresh turmeric and toasted salted fish.

Saut�ed Curry (Gulai Tumis) Recipe

This Nyonya confinement dish is served third week onwards of post-natal period. Use only the freshest of the fish. You can fry a bull's eye egg and add to the curry to make a more substantial dish.

Ingredients :Traditional Chinese Nyonya Confinement Food Recipe - Saut�ed Curry (Gulai Tumis)
  • 500-600g Jenak fish slices or pomfret
  • � cup cooking oil
  • ginger flower (bunga kantan), sliced

    Spice Ingredients (sliced) :
  • 20 stalks dried chili (soaked in hot water until soft, drained)
  • 4 fresh red chilies
  • 2 stalks lemongrass
  • 2cm old turmeric
  • 5 cloves garlic
  • 30 shallots
  • 1 tsp dried shrimp paste (belachan)

    Seasoning :
  • 50g tamarind, plus 3 cups of water
  • 2 tbsp sugar
  • salt to taste
Method :
  1. Place all spice ingredients in an electric blender, adding enough water to allow the blades to move. Grind until all the spices are finely blended into paste.
  2. Heat some oil in a wok, saut� the spice paste until fragrant. It takes about 15 minutes.
  3. Add tamarind juice and bring to a boil. Simmer for 10 minutes, adding more water to prevent gravy from drying up.
  4. Add in fish slices and ginger flower, season to taste with sugar and salt.
  5. Simmer about 2 minutes until the fish is cooked through, before turning off the heat.

Chicken in Soy Sauce Recipe

Chicken gravy will congeal when left to cool, hence heat up before serving. Children will find it nice if this dish served everyday by just omitting the ginger slices.

Ingredients :Traditional Chinese Nyonya Confinement Food Recipe - Chicken In Soy Sauce
  • 500g kampong chicken (cut into bite sizes)
  • 100g chicken liver
  • 20g ginger (finely sliced)
  • 1� cups water
  • 2 tbsp sesame oil

    Condiment :
  • 50g sugar or to taste
  • 1 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1 tsp pepper
  • 1 tsp salt
Method :
  1. Marinate chicken pieces and chicken liver with condiment for at least 30 minutes in the refrigerator.
  2. Heat sesame oil in a wok, pour in marinated chicken pieces, chicken liver, ginger and water.
  3. Bring to a boil, simmer over low heat, stir occasionally until chicken are tender, about 20-25 minutes, add more water if necessary.
  4. Remove from wok when gravy is thick and season to taste.
