This Teochew-inspired dish is an ideal confinement diet, it enhances appetite and strengthens bones. For ordinary intake, black bean can be omitted.
Ingredients :
- 100g fried black beans
- 5 tbsp sesame oil
- 600g skinned old ginger
- 2kg shank (pork front leg)
- 350g sweet black vinegar
- 300g black vinegar
- 1 tbsp rock sugar
- 1 liter water
- 3 tbsp Chinese wine (Shao Xing wine)
Seasoning : - 1 tsp salt
- 2 tbsp chicken broth
- 5 tbsp soy sauce
- 1� tbsp thick soy sauce
Method :
- Soak black beans for 2 hours, then cook until soften, set aside.
- Cut ginger into pieces and smash, at the same time, blanch shank in boiling water.
- Heat 5 tbsp sesame oil, saut� ginger until fragrant. Add in shank and fry till fragrant, add in water, vinegars, rock sugar, seasoning and black beans.
- Shift to claypot, simmer for 40 minutes, then toss in wine before serving.
